Soft bulgur salad with curd cheese

Ingredients

  • 4 tablespoons of fine bulgur wheat
  • 1 ripe tomato
  • 1 small cucumber
  • 3 tablespoons of unsalted pasteurised curd cheese
  • 200 ml water

Method

  1. Soak the bulgur in hot water, cover it and leave until it has swollen and softened completely.
  2. Peel the tomato, remove the seeds and chop it very small.
  3. Peel the cucumber, scoop out the seedy middle and grate it finely; squeeze out the excess liquid.
  4. When the bulgur is completely soft, stir the vegetables through; add no salt, lemon or spice.
  5. Stir in the curd cheese and serve at room temperature.

Texture

Completely softened bulgur with very finely chopped vegetables, and no firm bulgur grain and no tomato skin left.

Serving

Serve at room temperature and let your child eat it with a spoon. This recipe is not reheated.

Preparing for choking safety

The bulgur is softened by soaking alone and no firm grain may remain; bulgur is made from wheat. The tomato's skin and seeds and the cucumber's skin and seedy middle must be removed. Cucumber is never served as sticks. Unpasteurised dairy is not used.

Storage

Serve as soon as it is mixed; this recipe is not reheated. Throw away a half-eaten portion rather than keeping it.

Safety

Your child should be sitting upright and someone should stay with them while they eat. No salt or sugar is added to these recipes; honey is not given before one year. Their back teeth may not be through yet, so every piece must be soft enough to squash with gums and cut to a safe size. Children do not all manage the same texture at the same age — follow your child's pace rather than pushing. If your child has an allergy, eczema, or a family history of allergy, talk to your GP or health visitor before introducing new foods. Introduce foods that can trigger an allergic reaction one at a time and in small amounts, so you can spot any reaction.
